Boulot - the artisanal sourdough bakery based in Antwerp
Boulot is the bakery of the two inspiring women Anne and Truus. They make Antwerp's purest sourdough bread and the finest viennoiserie. Each product is artisanally prepared in an open workshop that is simultaneously their shop.
"The great thing about sourdough is that it changes every day. What the dough is like depends on so many different factors, so many things out of your control. The humidity, for example. You can follow the same recipe every time but each time you create something different because of the different conditions.
You have to learn to listen to the sourdough, look at your dough and feel it. Based on that, you start drawing conclusions and adjusting your preparation process. This is very fascinating because this process never stops and you learn every day.
For us, sourdough bread is the only real way to make bread. Bread with yeast is called bread aswell but it is something completely different."
